Chicken & Rice Casserole with Cheddar, Bacon, and Ranch

New favorite alert! This Crack Chicken Rice-a-Roni Casserole should come with a warning label. It is ridiculously good! Chicken, rice-a-roni, sour cream, cream of chicken, cheddar, bacon, ranch, and french fried onion. All of my favorites in one dish! We ate this for lunch and had the leftovers for dinner on the same day. We just couldn't get enough of it! Give this a try the next time you need an easy weeknight meal that the whole family will enjoy.

How to Make Crack Chicken Rice-a-Roni

This casserole is super easy to make. Start with preparing a box of Chicken Rice-a-Roni according to the package directions. Combine cooked rice with sour cream, and cream of chicken soup. Stir in cooked bacon, cheddar cheese, ranch dressing mix, and cooked chicken. Spread the mixture into a baking dish. Top with french fried onions and bake.

Crack Chicken Rice-a-Roni Casserole

Yield: 6 people

Cook Time 30 mins

1 box chicken flavor Rice-A-Roni
1 (10.75-oz) can cream of chicken soup
1¼ cup sour cream
4 cups cooked chopped chicken
¾ cup cooked chopped bacon
2 Tbsp dry Ranch dressing mix
1½ cups shredded cheddar cheese
1 (6-oz) can French fried onions

Preheat oven to 350º F. Spray a 9×13-inch baking dish with cooking spray.
Prepare Rice-A-Roni according to package directions. Add soup, sour cream, chicken, bacon, ranch, and cheddar cheese. Stir to combine.
Spread rice mixture into prepared pan. Top rice with fried onions.
Bake uncovered for 30 minutes.
